Roasted Carrot and Pomegranate Kale Salad
A beautiful and equally flavorful autumn salad! Roasted carrots with jewel-toned pomegranate on a bed of chopped dark leafy tuscan kale and arugula. Toss at home with sweet and tangy pomegranate vinaigrette. Served with toasted pecans and feta on the side (dairy and cut free without the feta and pecans). Serves 2.
