Wonderful green curry with eggplant, bamboo shoots, bell peppers and mushrooms.

Ingredients: Coconut milk, green curry paste (green chili, lemongrass, garlic, salt, galangal, shrimp paste (shrimp, salt), lime leaf peel, coriander seed, pepper, cumin, turmeric), eggplant, mushrooms, bell peppers, bamboo shoots, non gmo olive oil canola blend , non gmo canola oil , salt, fish sauce (anchovy extract, water, salt), brown sugar
Serving Size: 1.5 cups coconut green curry with 3/4 cup veggies
Eat Within: 5 days
Instructions: Bring curry to a boil in heat safe dish, add veggies and simmer for 5 minutes.
