Roasted Yam & Kale Tacos

Healthy, delicious and a welcome departure from typical tacos! Diced yams, spiced and roasted with Tuscan kale and caramelized onions. Served on corn tortillas with a tasty, dairy free zesty cashew crema and spiced pepitas.

Ingredients: Yams, non gmo olive oil canola blend , onions, garlic, kale, pepitas, non gmo canola oil , cashews, lime, corn masa, water, chipotle chili powder, salt, cumin, pepper

Serving Size: 1.5 taco filling, 2 corn tortillas, .75 oz cumin cashew lime sauce, 2 TB spiced pepitas

Eat Within: 5 days

Instructions: Reheat yam kale mix over medium heat & saute for 5 minutes until hot. Assemble tacos!
