Roasted Eggplant Ratatouille

One of my favorites! A bounty of fresh veggies stewed together into a hearty ragu of deliciousness.

Ingredients: Eggplant, yellow squash, zucchini, tomatoes, yellow & red bell peppers, yellow onions, basil, non gmo olive oil canola blend , garlic, thyme, bay leaves, salt

Serving Size: 2 cups

Eat Within: 4 days

Instructions: Reheat on stovetop over medium heat & simmer for 5 minutes.

Notes: Enjoy with Creamy Polenta!
