One of the Maven's favorite one-pot dishes! Red Lentils with the warming spices of turmeric, cumin and coriander with golden sautéed zucchini over the top.

Ingredients: Red lentils, yellow onions, zucchini, coconut milk (coconut extract, water, polysorbate (as emulsifier), xanthan gum (as stabilizer)), jalapeno, garlic, ginger, non gmo canola oil , salt, turmeric, cumin, coriander

Serving Size: 2 cups coconut lentils topped with 1/2 cup zucchini

Eat Within: 5 days

Instructions: Reheat over medium heat on stovetop stirring until hot.
